Chocolate Chip Cookies

This week I baked for The Allison Family. My friend Ashley was sick with strep-throat and her mom, Donna, is battling cancer. My brother Tim went to prom with Ashley and I knew that she was going to have some friends over afterwards, so I thought they all would enjoy this treat! I decided to bake these yummy cookies for them that can be found on page 66 of this book: 1001 Cupcakes, Cookies and Other Tempting Treats by Suzanna Tee.

8 tbsp butter (plus extra for greasing pan)
a heaping 1/2 cup dark brown sugar
1 egg
1-1/4 cup rolled oats
1 tbsp milk
1 tsp vanilla extract
1 cup all-purpose flour
1 tbsp unsweetened cocoa
1/2 tsp baking powder
6 oz. semisweet chocolate broken into pieces
6 oz. milk chocolate, broken into pieces

Directions:

Preheat oven to 350 degrees. Grease 2 large baking sheets. Place the butter and sugar in a large bowl and beat together until light and fluffy. Beat egg in. Add oats, milk and vanilla extract and beat together until well blended. Sift flour, cocoa, and baking powder into mixture and stir. Stir in chocolate pieces.

Place tablespoonfuls of mixture on the baking sheets and flatten slightly with a fork. Bake in oven for 15 minutes or until slightly risen and firm. Let cool on baking sheet for 2 minutes, then transfer to wire rack to completely cool.

God, please keep your hands over the Allison Family. Heal Donna and keep everyone in her life healthy. I pray that everything goes smoothly with Ashley graduating in May and heading off to college. Keep Amanda healthy and give Dave safe travels. In Jesus’ name I pray these things, amen ❤
