Midnight Cookies for Uncle Shane

So…. in my last (and first) blog post, I shared with you about how I left cookies anonymously for a friend of our family’s. Well, it turned out that even though my intentions with being anonymous were good, it seems like that wasn’t a good idea after all because the beautiful recipient of my cookies didn’t want to eat the sweet treats until she knew where they came from. Ooops!

I can’t say I blame her, so from now on I will be sharing with you exactly who I am baking for and why along with the yummy recipe for the treat God leads me to make them. I figure that they are still blessed and I can still be a blessing even though they will know the treat was from me 🙂

For my next treat, God lead me to make Midnight Cookies for my Uncle Shane. He just moved here to Tennessee from California and I thought it would bless him to have homemade cookies. I went to visit him right when he moved in and he didn’t have hardly anything in his kitchen. I know he likes cookies and I thought it would make him happy to have a sweet, homemade treat. He is a really cool Uncle and I’m so glad he moved here!

Here is the recipe for Midnight Cookies featured on page 82 of 1001 Cupcakes, Cookies and Other Tempting Treats by Suzanna Tee. This recipe made 2 dozen cookies.

Ingredients:midnight ingredients

  • 9 tbsp butter, softened
  • 1 cup super fine sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup flour
  • 1/3 cup unsweetened cocoa
  • 1/2 cup baking soda


Preheat the oven to 350 degrees. Place the butter and sugar in a large bowl and beat together until light and fluffy. Add the egg and vanilla extract and mix until smooth. Sift flour. cocoa and baking soda and beat until well mixed. With damp hands, roll walnut-sized pieces of the dough into smooth balls. Place on the baking sheets, spaced well apart. Bake in preheated oven for 10-12 minutes. Let them cool for 5 minutes on baking sheet before moving to wire rack to finish cooling.

I hope that these cookies blessed my uncle and that he enjoyed them. I hope that he will love his new house and be very here in Tennessee. In Jesus’ name, amen ❤
